South Pacific sandfish is made from dried fresh sea cucumbers, which can be divided into three types: [stichopus japonicus], [bald ginseng], and [pig sage]; sea cucumbers have extremely high efficacy and effects and are a kind of high nutritional value. Although marine products are born in the sea, they have nourishing properties and are sufficient for the enemy's ginseng, so it is named [Sea Cucumber], but it is not a hot product, but very mild food.

How to cook:
1. Soak the sea cucumbers in clean water for about two days (depending on the size), and the clean water must be changed once or more a day;
2. Put the sea cucumbers in boiling water and cook for about 20 minutes, turn off the heat and cover the pot and bake until the water is cold. If the sea cucumbers are large in volume, repeat this one or two times until the sea cucumbers are soft;
3. Take out the sea cucumber, cut the belly, push out the intestines along the inner wall of the sea cucumber and remove impurities, wash the sea cucumber with clean water, cut into pieces (according to the method of cooking sea cucumber) and set aside;
4. Put it in hot water with ginger, spring onion, and wine and boil for about 5 minutes before cooking. Cook and eat within a week.

Note:
a. There may be a small amount of sand in the sea cucumber belly, which must be washed thoroughly before cooking.
b. How to send sea cucumbers has a great influence on the quality of sea cucumbers. When soaking sea cucumbers, pay attention to the products that must be non-greasy. Do not add salt to the water. Do not touch the peritoneum when you go to the sea cucumber intestines, otherwise, it will easily fall apart during cooking.

海参是由鲜活海参干制而成,当中可分为【刺参】、【秃参】、【猪婆参】三大种类; 海参的功效与作用极高,属于一种具有高营养价值的海产,虽生于海,其性温补,足敌人参,所以取名为【海参】,但非热性之品,而是性质很温和的食物。
功效 : 海参是一种高蛋白质、低脂肪、低胆固醇的海味,海参的功效与作用为补肾益精、养血润肤、养颜抗衰老,对身体虚弱人士尤为有益。

特性: 味甘鹹,性溫。

烹調技巧 :
1.将海参用清水浸发约两天(视乎大小而定),每天必须更换清水一次或以上;
2.把海参放入沸水内煲煮约20 分钟,熄火后盖上煲盖焗至水冷,若海参体积较大可重复一至两次,直至海参柔软为止;
3.取出海参,剪开参肚,并顺着海参内壁推出肠脏及除去杂质,把海参以清水洗净,切块(可按烹调海参的做法而定) 待
用;
4.放入加有姜、葱及酒的热水内煲煮约5 分钟,便可进行烹调,如未即时烹调须把海参放入雪柜冰格(-18或以下)储存,并需于一星期内烹调食用。

附註 :
a.海参肚内或可能藏有少量幼沙,必须彻底冲洗干净,方可进行烹调煮食。
b. 海参怎么发对于海参的品质有很大影响,泡发海参时留意用品必须无油腻,水中不应加盐,去海参肠脏时也不可碰破腹膜,否则烹制时容易散烂。
