How to eat pork tendon:

猪蹄筋的食用方法:
第1步猪蹄筋熟食:猪蹄筋不宜生吃,干制蹄筋食用前应泡开。
第2步猪蹄筋炖煮:猪蹄筋可以与黄豆在炖盅里炖煮,胶原蛋白丰富,美容养颜。
第3步猪蹄筋煮汤:猪蹄筋也可以与老鸡党参煮汤,醇香美味,滋阴补肾。
蒸猪蹄筋
材料:
猪蹄筋500克,鸡肉100克,火腿50克,蘑菇(鲜蘑)25克,胡椒3克,料酒10克,味精2克,姜10克,大葱10克,盐3克。
做法:
(1)将干蹄筋洗净,切成斜口片,把猪蹄筋片放入钵中,加入1000毫升清水,上笼蒸4小时,至猪蹄筋片酥软时取出;
(2)用凉水浸2小时剥去外层筋膜,洗净;
(3)火腿、水发蘑菇洗净后切成丝;
(4)将发涨的猪蹄筋片切成长节,鸡肉剁成小方块;
(5)将猪蹄筋片、鸡肉块放入蒸碗内,再把火腿丝和蘑菇丝调匀,撒在周围;
(6)将姜片、葱段放入蒸碗中,上笼蒸3个小时;
(7)待猪蹄筋片酥烂后出笼,拣去姜片、葱段不用,加上胡椒、料酒、精盐、味精即可。
酥炸蹄筋
材料:
猪蹄筋,小麦面粉、鸡蛋黄、碱、盐,味精、黄酒、油。
做法:
(1)将猪蹄筋挤去水放入碗内,加盐、味精、黄酒调好口味,拌上花生油。
(2)另取一碗,将发酵面放入,用少许清水调匀,加碱(去酸味)、鸡蛋黄、面粉调成糊,放入蹄筋抓匀。
(3)炒锅内加入花生油,置中火烧至六成热,下入蹄筋,炸硬身捞出。
(4)待油至九成热时,再下入蹄筋,炸酥呈金黄色时取出装盘即成。
宫保蹄筋
材料:
蹄筋1条,花生米,花椒,蒜末,姜末,干辣椒,蒜苗,笋,盐,醋,酒,淀粉,水,高汤,白糖,葱花,陴县豆瓣酱。
做法:
(1)蹄筋先切成小片或者块,笋也切成小块,干辣椒切段。用盐、白糖、醋、酒、淀粉、水或者高汤调成汁。
(2)热锅后先放少许辣酱,可以是陴县豆瓣酱,也可以是别的辣酱,那天我用的是朋友从四川带的类似阿香婆那种味道的酱,先炒香,炒出红油,然后放入干辣椒和花椒略炒一下,再放葱花、蒜末、姜末,炒出香味。
(3)然后放蹄筋和笋块,翻炒一会。如果用的是新鲜的笋就要先过一下水煮一下,我用的是真空包装的,也就是传说中的玉兰片,过水不过都可以。
(4)最后倒入之前调好的汁,迅速翻炒,最后放蒜苗炒到汁都收浓就可以了,出锅的时候放花生米OK。
